~Sweet Vidalia Spinach Salad~

  • Microwave, or otherwise prepare breaded frozen chicken strips/nuggets. Slice into thin strips and set aside to cool some.
  • Start with a bed of fresh baby spinach.
  • Sprinkle with a handful (more or less to taste) of matchstick carrots (found in the produce section)
  • Add a half a handful (more or less to taste) of raisins
  • Top with the chicken that is now cooled.
  • Serve with Ken's Steakhouse Sweet Vidalia Onion dressing (a variation on Poppyseed dressing) or simply any poppyseed (a sweet and sour) dressing.
  • If you don't like poppyseed, you can really use ANY dressing but the sweetness complements the carrot and raisin flavors VERY well.
