When one is gaming, leftovers can be the key to a quick meal! Choose a ham that allows for lots of leftovers, as it freezes well (use freezer bags and be sure you date them so you know how long they've been frozen!)
- 1 med/lg Ham (quality is a MUST here! Cheap hams are often loaded with salt and aren't nearly as good - I like a nice Spiral Sliced Honey Ham or Brown Sugar Ham.)
- 3/4 jar of 13.5 oz size of Raspberry All-fruit JAM (NOT JELLY)(Blackberry or other berry may be used)
- 1/2 jar of 13.5 oz size of Apricot All-fruit JAM
- 2 tablespoons of honey
- 2 tablespoons of Triple Sec
- 1/4 c of very lightly packed brown sugar (I prefer dark brown sugar)
- 5-10 whole cloves (to taste)
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
Combine all ingredients EXCEPT THE HAM in a sauce pan. Simmer and stir until the jam thins to a semi-liquid and the brown sugar is thoroughly melted. Allow to simmer on very low heat so that the spice flavors mingle nicely. Then set aside to partially cool so it is not boiling hot.
The key to juiciness? A Reynolds (tm) Oven Bag. Dust the bag lightly with flour, put in the ham, and then taking a soft brush (or your fingers if you don't have a brush) coat the ham *thoroughly* and *liberally* with the glaze. Cook according to the times on the chart. (NOTE: Chart recommends adding water - I DO NOT add water! There is plenty of liquid in the glaze. For a 2-6 lb boneless ham you can cook it at 325 degrees for between 1 and 1 3/4 hours. Check it about every 15-20 minutes, and baste it with more glaze. If you don't have a brush, once the ham gets hot, just drizzle the glaze over the top as it will be too hot to use your hands. (Always thoroughly wash your hands while handling any food - before AND after). Once the internal temperature is at 140 degrees, your ham is done!
I reserve a little bit of the glaze to drizzle over the ham once it has been sliced for sheer presentation.
Enjoy! Goes great with a nice sweet potato (which can be microwaved in just a few minutes, depending on size - don't forget to stab it with a fork to prevent a messy explosion!).
